Update time!! and better mac and cheeze!!!

So, time to make some changes. We have recently had some big time stuff going on (including losing the air conditioner and furnace when it was 90F, and a surgery for a two year old) and we are forced now to stick to a tight budget. Not easy with five kids, a special diet, and life! But i am going to follow through with it here! and also, i updated my mac and cheese recipe! it's creamy, delicious, and full of veggies that you can't tell are in there!

The budget change must be instant. The good thing about this mac and cheeze is that it lasts a lot of meals. The rough price breakdown, as written is about $32 for the pot, but for 6 people it lasts AT LEAST 4 meals, so $8 a meal, which is about $1.25 per person per meal. WAY cheaper than the boxed stuff or take out!! Here it goes! Creamy, healthy delicious comfort food that your kids will eat (and you don't need to tell them about the vegetables!). Oh also, my dad ate it..... and that's really all i need to say about that.... hahaha... Mr. meat and potatoes eats vegan!

Ingredients
4 Pounds pasta (gluten free if needed)
1 head of cauliflower
1 sweet potato
2 white potatoes
4 regular carrots (or a bunch of baby)
1 bad frozen broccoli (or spinach)
6 cups unsweetened milk (we use flax)
1/2 cup flour (gluten free, or corn starch, potato not recommended it gets gooey in a bad way )
3 daiya cheese blocks or bags(i usually use cheddar, but have used all ) *optional
spices: garlic powder, onion powder, salt, pepper
4 tablespoons (really a huge squeeze) mustard
nutritional yeast (a cupish) * also optional but good for flavor
1/2 cup vegan butter, or olive oil, or combo *optional,but if not using whisk flour into milk first very well!


1. Steam all veggies together in large pot until fork tender. Drain, save water! 
2. Blend veggies into a medium/thick puree adding cooking water as necessary, with a teaspoon of salt, 1/2 teaspoon garlic powder.
3. use rest of water plus more to boil pasta until tender. do not over cook!set aside
4. Add butter/oil to pot and melt, whisk in flour and cook until warm and well mixed. 
5. add milk and whisk well! cook on medium/high, continuing to whisk until thick. 
6. Add spices and mix.add cheese, if using, and stir until melted.
7. mix everything together, taste and reseason to taste.
8. Call your family to eat and enjoy watching them eat veggies without complaining! 
9. This is delicious and creamy out of the pot, but if you prefer, it is also tasty put into a casserole dish and baked at 350F for 40-50 minutes, or until bubbly. You could always top with cheeze or some topping if you feel creative. 


This takes about two hours with one pot. I've done it quicker using three.
