This season has been very hectic for us as we prepare to visit family in New York. Yup, a 9 or 10 hour car ride with a two year old and a 7 month old. We are crazy! At any rate, as I have been busy figuring out how not to pack clothes in the winter, to save room, and how to possibly make cookies to make everyone happy and potentially that Jake can eat, I have not had a moment to post new recipies. I do however, have one coming that is meatloaf, except with beans. I know, does not sound fabulous, but even my husband (again!) enjoyed it! Until then, think it would be bad for the kids to wear their blankets for a week? OH, I may throw in some cookie recipies too! I have been experimenting with good egg substitutes. Eggs, in my opinion, are the hardest thing to replace. I am open to new ideas too. I do not like to use Ener-G (not because it's not good, but i prefer to use "real food".

Valentine's Day Sweets and Sweeties...

After an early morning of painting (thanks to a Valentine present of paint)... What does one make for Valentine's Day for a family diverse in it's pickiness and it's allergies? Well, apparently two things. Individual heart apple pies (which will not happen again for a looong time!) AND these, fabulous and easy cookies... Delicious Allergy Free Oatmeal Cutout Cookies Beat: 3/4 cup Earth Balance (or butter) 3/4 cup organic sugar 1t vanilla 1 T ground flax seed mixed with 3 T warm water (the warm helps to make it goopy) (or an egg ) 3 T Rice milk (or alternative) blend in: 2 1/2 cups wheat flour 1 t. baking powder 1/2 t. salt stir in: 1 cup oatmeal Dough will seem very crumbly, use your hands to make a ball. Add a touch more flour or milk if needed. I refrigerated for about an hour, but that's not necessary. N.. Ice Cream....Summer preview!

We hit a record high yesterday for February! It was 75 degrees F. and Fantastic!!! Homeschooling is great on days we can play outside! (Well and almost every other day!) So i had a bazillion bananas get ripe because if i buy two they eat them before we get home, if i buy 20..... i throw them away. Anyhow, i got proactive and peeled and froze them before they got really gross. So i made nice cream. pretty run of the mill recipe. nothing exciting. added strawberries and "milk" to frozen bananas yesterday, then little chocolate chips (all dairy free of course!). And today this... i looked online for cake better flavored things and came up with this based on a few. Cake Batter Nice Cream 5 frozen bananas vanilla (about a tablespoon) milk (just enough to blend thick. though a smoothie would be good too, add more!) melted dairy free butter (1/4 cup) coconut flour (about 1/4 cup) sprinkles (optional) a big spoonful of cashew butter (probably a big tablespoon) (

Merry Christmas and Other Holidays!! And vegetables!

My thankfulness on Thanksgiving was a little premature.. Upon further testing, my father does have a slightly serious form of cancer and is getting his first chemo as I type. It is surely time for scientists to start working on why cancer is occurring at the rates it is as well as the cures!! In doing so, I want to start focusing on a healthier plant based diet for my family. Time to invent new recipes with vegetables that my kids will eat!! This is a daunting task, that I sometimes feel tired about. hahaha... But it's what needs to happen! If I could give up most things in a package I would. But I'm not that daring yet! I first want to attempt to invent some type of vegetable based dip or cracker... something picky kid appealing. If I actually find something that 3 of 4 of my kids eat, I will consider it a huge win!!
